Chocolate Soufflés for Two

2 teaspoons cocoa

½ cup water

¼ cup powdered sugar

2 tablespoons unsweetened cocoa

2 tablespoons skim milk

1 ½ teaspoons flour

1 large egg yolk

¼ teaspoon vanilla

1 large egg white

¼ teaspoon cream of tartar

1 tablespoon granulated sugar

2 teaspoons powdered sugar

  • Preheat oven to 350 degrees.
  • Coat 2 ramekins with butter and sprinkle with 2 teaspoons cocoa. Place on baking sheet.
  • Combine water and next 5 ingredients over low heat and cook until thick (about 6 to 8 minutes). Stir constantly. Remove from heat and add vanilla.
  • Beat egg white and cream of tartar at high speed until soft peaks form. Add 1 tablespoon sugar and beat until stiff peaks form.
  • Gently fold egg whites and chocolate mixture together.
  • Place in ramekins. Bake 20 minutes or until puffy and set. (mine took about 25 minutes)
  • Sprinkle with powdered sugar to serve.
